Your class's magic training is the scope of the Forms of Magic that a mage of that class would have been exposed to in their formal Torchlight training. These are the types of magic a character might know before they set out on the adventure of your campaign. This doesn't mean a character can't learn other forms of magic during the campaign - any mage can learn any spell with enough practice, but these are the types of magic you would be expected to begin a campaign with prior experience in, based on your class's typical functions within the Society. The GM may make exceptions to this rule depending on the campaign's level and a character's back story.
When creating a new character, you can only add skill values to the forms of magic that are a part of your class's training. If your Sorcery skill level allows a larger pool of values on the Sorcery table, or your magic training includes more forms than your Sorcery skill allows, you must use whichever subset is smaller and select a subset of values from that pool (probably the highest ones.)
